Baked Aubergine Kebab with Meatballs – Firinda Patlican Kebabi

We greatly enjoy this delicious southern Turkish style Baked Aubergine Kebab with Meatballs – Firinda Patlican Kebabi, especially popular in Gaziantep region in Turkey.  We adore aubergine / eggplant/patlican in Turkey; one can safely say, it is our national vegetable, with over 200 recipes featuring aubergine in Turkish cuisine. Its meaty, melt in the mouth texture and naturally sweet flesh is simply fantastic here, cooked with meatballs, tomatoes and peppers. Please use long and slim variety of the purple aubergines, eggplants for this kebab.

I love the ease of this all in one bake dish. Please make sure to sprinkle salt over the aubergine slices and squeeze out their excess moisture with a paper towel. Then simply coat olive oil and seasoning over the aubergine slices. There is no need to sauté or fry the aubergine slices and the meatballs before baking. They bake all together very well, infusing their flavour to one another. You can prep this dish ahead of time and freeze leftovers successfully.

Ingredients
  • For the kofte (meatballs):
  • 450g/1lb minced/ground lamb, beef or mixture
  • 1 medium onion, grated
  • 60g/2oz stale bread, soaked in water and squeezed dry
  • 1 egg, beaten
  • 1 small bunch finely chopped flat leaf parsley
  • 5ml/1 teaspoon ground cumin
  • 5ml/1 teaspoon Turkish pul biber or red pepper flakes
  • 5ml/1 teaspoon salt
  • Freshly ground black pepper to taste
  • Small bowl of water for kneading kofte and getting your hands wet
  • And the rest:
  • 2 medium and long (or 3, if smaller) aubergines / eggplants
  • 1 green bell pepper, deseeded and sliced in chunky wedges
  • 2 medium tomatoes, thinly sliced
  • 45ml / 3tbsp olive oil (to coat the aubergine slices)
  • Salt and freshly ground black pepper to taste
  • For the sauce:
  • 3 garlic cloves, crushed and finely chopped
  • 30ml/2tbsp double concentrated tomato paste
  • 30ml/2tbsp olive oil
  • 200ml/7fl oz warm water
  • Salt and freshly ground black pepper to taste
Instructions
  1. Preheat oven to 200C/400F
  2. First prepare your meatball mixture. Discard the crusts of the bread, soak in the water and squeeze dry. Then crumble them into a large bowl. Add all the kofte, meatballs ingredients except the ground/minced meat and knead well. This will soften the onions and enable the spices to blend in the mixture evenly. Add the minced/ground meat and knead well again until the mixture resembles a soft dough. Cover with cling film and keep in the fridge until ready to use.
  3. Slice the aubergines/eggplants into about 1.5cm / 0.6in circles and spread over a large tray. Sprinkle some salt over them and leave for about 10 minutes. Gently squeeze out their excess moisture with paper towel. Place them back on a clean large tray.
  4. Drizzle 45ml / 3tbsp olive oil over the aubergine/eggplant slices. Season with salt and freshly ground black pepper. Using your hands, gently rub the olive oil and seasoning over the aubergine/eggplant slices.
  5. Now, shape your meatballs. Have a bowl of cold water near you. With damp hands, take a piece the size of a large walnut and roll into a round meatball, as large as your aubergine/eggplant slices, and slightly flatten. Place them on large dish or a tray side by side.
  6. Have a round baking dish with 25cm/10in diameter near you (a 25cmx25cm square baking dish would work well too). Place a slice of aubergine upright and place a meatball alongside. Repeating this, place all the aubergine slices and meatballs side by side, quite tightly, so they can stay upright.
  7. Gently tuck in the coarsely sliced bell peppers around the aubergine slices and meatballs. Place the tomato slices around the middle part of your round baking dish, in between aubergine and meatball layers, or if you are using a square baking dish, in between layers.
  8. For the sauce; combine the finely chopped garlic, 200ml/7fl oz warm water, 2tbsp tomato paste and 2tbsp olive oil in a bowl. Season with salt and ground black pepper and combine well.
  9. Pour the sauce over the prepared aubergine, meatballs and vegetables. Cover with aluminum foil and bake in the preheated oven for about 40-45 minutes.
  10. Then take the cover off, gently spoon the sauce in the baking dish over the aubergine and meatballs and bake further 20 – 25 minutes, until the meatballs and vegetables cooked and slightly charred.
  11. Drizzle the sauce from the baking the dish over the aubergine and meatballs again. Serve with plain pilaf rice and cooling Cacik dip of cucumber and yoghurt aside.

Merhaba all; we had a delightful Turkish cookery class recently and this baked eggplant or aubergine kebab with chicken, onions and peppers was a big hit at the class.

This is a southern Turkish style kebab, prepared at homes. The aubergines (eggplants) are double baked in this recipe, Southern Turkish style, which intensify their flavor. In Southern part of Turkey, especially in the regions of Gaziantep and Antakya, locals would use up the left over grilled or barbecued eggplants to make this delicious, home style kebab the next day. A tradition in Antakya is to prepare the kebab at home and take the tray to the local bakery to be baked in the wood fired oven, providing amazing, melt-in-the mouth flavors. I hope you enjoy recreating this lovely, impressive dish in your home for family and friends.

Tip: Marinating the chicken in yoghurt, olive oil, Turkish hot pepper paste, biber salcasi and spices is really well worth the effort; it tenderizes the chicken and enables the flavors to blend well.

Ingredients
  • 2 medium aubergines (eggplants)
  • 700 gr / 1.5 lb. chicken thighs or chicken breast, skinned and cut in 4x4 cm (1.6” x 1.6”) chunks
  • 2 red Romano (pointy) or bell peppers, deseeded and sliced in chunks
  • 1 green (pointy or bell) pepper, deseeded and sliced in chunks
  • 1 medium onion, coarsely chopped
  • 45 ml / 3 tbsp. olive oil
  • Salt and ground black pepper to taste
  • For the chicken marinade:
  • 2 garlic cloves, finely chopped
  • 30 ml/ 2 tbsp. plain whole milk yoghurt
  • ½ tbsp. tomato paste
  • ½ tbsp. Turkish hot pepper paste (optional)
  • 5 ml/ 1 tsp red pepper flakes
  • Salt and ground black pepper to taste
  • 15 ml / 1 tbsp. olive oil to sauté the marinated chicken
  • For the sauce:
  • ½ tbsp. red pepper paste or 1-2 tsp. red pepper flakes
  • ½ tbsp. tomato paste
  • 12 fl. oz. / 1 ½ cup water
Instructions
  1. Preheat the oven to 180 C/ 350 F
  2. Peel the aubergines (eggplants) in zebra stripes, using a vegetable peeler or a small knife. Cut the aubergines in lengthways then in 1cm (0.4”) thick slices. Place the slices on a tray and sprinkle salt over them (The salt will help extract the bitter juices out of the aubergines). Set aside for 15 minutes.
  3. Prepare the marinade for the chicken. Place the chicken pieces in a large bowl. Stir in the yoghurt, garlic, olive oil, tomato paste, red pepper paste (if using) and red pepper flakes. Season with salt and ground black pepper to your taste and combine and mix the chicken pieces with the marinade. Cover the marinade and leave in the fridge for 30 minutes (you can prepare this marinade ahead of time, even overnight and leave in the fridge).
  4. Using kitchen paper towel, squeeze the excess moisture out of the aubergines. Place the aubergines on a tray and drizzle 3 tbsp. olive oil over them. Coat the pieces with the olive oil and partially bake in the preheated oven for 15 - 20 minutes, until starting to char around the edges.
  5. Heat the olive oil in a large heavy pan and stir in the marinated chicken pieces. Sauté over medium to high heat for 4 – 5 minutes, turn the heat off.
  6. Once the aubergine slices partially baked, prepare the chicken & aubergine bake with vegetables. In a large baking dish, place a chicken piece next to onion, pepper (alternating red and green pepper pieces) and aubergine slices. Keep on placing chicken and vegetables in this order side by side, until all the chicken and vegetables are layered. Spread any remaining aubergine slices at the top.
  7. To prepare the sauce, stir in the red pepper paste, tomato paste, red pepper flakes and the water to the pan used for sautéing the chicken. Combine all, also using any leftover chicken marinade sauce in the pan. Pour in this mixture over your tray with the chicken, aubergine and vegetables.
  8. Bake in the oven for 35 – 40 minutes, until chicken and vegetables are cooked and turned light golden color.
  9. Serve hot with plain rice or bulgur pilaf aside.

Our national favorite Patlican, or aubergine or eggplants are appearing in the markets more now; I love its deliciously sweet, meaty flesh in mezzes, salads, casseroles, even in boreks, savory pastries. This recipe, bended eggplant slices with meatballs or Patlicanli beli bukuk, or Boynu bukuk as we call it, is a childhood favorite. Marriage of the delicate eggplant flesh with meatballs, baked in a delicious tomato sauce with peppers is simply heavenly. All you need is some crusty bread or rice aside and you are all set with a scrumptious, complete meal.

You need slim and long purple eggplants for this recipe, as they are first quartered lengthways and then each quarter are cut into deep splits (keeping the skin intact). Once the slices are shallow fried (or baked in the oven, if you prefer), they will soften and bend. If you are in Turkey, you can get those really slim and long eggplants, patlican, which won’t need cutting lengthways; you can just cut deep splits side ways and prepare the recipe.

We then insert small meatballs, koftes to these slits, which will naturally bend the eggplants and hence comes the name; Patlicanli Beli Bukuk or Patlicanli Boynu Bukuk Kebab (Bended Eggplant Kebab). It may sound a little tricky to do, but it really is not; you will get the hang of it in a few tries. The meatballs cocooned around the eggplants cook deliciously in the juicy sauce with peppers and tomato sauce.

I hope you enjoy one of our favorite kebabs with patlican, eggplant. Cacik dip with yoghurt, cucumbers and dried mint would be delicious aside, so as this wholesome bulgur pilaf with almonds. I use biber salcasi, Turkish red pepper paste  to flavor the sauce and it adds a delicious heat, if you like it too. If not, you can replace it with tomato paste.

Ingredients
  • 4 long purple eggplants/aubergines
  • 2 bell or pointy peppers (green, red or yellow), deseeded, quartered and cut in chunky slices
  • 1 onion, coarsely chopped
  • Light olive oil or canola oil to shallow fry the eggplants
  • 4 – 6 garlic cloves, chopped
  • 15 ml / 1 tbsp. Turkish red pepper paste, Biber salcasi or tomato paste
  • 60 ml/4 tbsp. water to dilute pepper paste or tomato paste
  • 400 gr/14 oz. can of chopped tomatoes
  • 30ml/2 tbsp. olive oil
  • 16 fl oz. / 2 cups of water
  • Salt and ground black pepper to taste
  • Kofte/Meatball ingredients:
  • 400 gr/14 oz. ground beef, lamb or mixture
  • 1 onion, finely chopped or grated
  • 1 slice of slate bread (white or brown), soaked in a bowl of water
  • 1 egg, beaten
  • Handful of flat leaf parsley, finely chopped
  • Salt and ground black pepper to taste
Instructions
  1. Preheat oven to 180C/350F
  2. Cut the stalk of the eggplants and slice in half lengthways. Then cut each slice again in lengthways, you will get 4 long quarters per eggplant.
  3. Then cut each eggplant quarter into 3 -4 deep splits (keeping the skin intact), depending on the length of the eggplant.
  4. Sprinkle salt over the flesh side of the eggplants and leave them aside for 15 minutes. Salt will help the moisture and the bitter juices come out of the eggplants. Dry the eggplants with kitchen towel thoroughly afterwards.
  5. To prepare the meatballs, soak the stale bread slice in a small bowl of water then squeeze dry. In a large bowl, combine all the kofte, meatball ingredients except the meat and knead well. That will help soften the onions and blend the ingredients homogenously. Stir in the ground meat, season with salt (about 1 - 2 tsp.) and ground black pepper to your taste. Knead for a good 3-5 minutes with your hands, until the mixture becomes elastic and mixed well. Cover this mixture with a cling film and rest in the fridge for 15 minutes (or a little more, if you can).
  6. While the meatball mixture is resting, prepare the eggplant quarters. Pour in 2 tbsp. light olive oil or canola oil in a heavy pan and lightly brown the eggplant slices for 2-3 minutes. You may need to top up with light olive oil if you’re shallow frying (Alternatively, you can bake the eggplant quarters in the preheated oven at 200 C, for 20 – 25 minutes. Make sure the tray and the eggplants are greased with olive oil before baking). Place the sautéed eggplant quarters on a large tray and set aside.
  7. Shape the meatball mixture into walnut sized meatballs. Gently bend the sautéed eggplant slices and insert the meatballs at the splits, gently push the meatballs in. You will insert 3-4 meatballs into each eggplant slice.
  8. Carry on until all the meatballs are inserted into the splits of the eggplants. If you have any meatballs left over, you can place them in the middle of the bended eggplants with meatballs or you can place them around the tray.
  9. Place the eggplants with meatballs in a baking tray.
  10. Spread the chopped onions, garlic and peppers around and stir in 2 tbsp. olive oil over these vegetables and gently mix with your hands.
  11. Pour in the chopped tomatoes around the tray.
  12. Dilute 1 tbsp. pepper paste, biber salcasi or tomato paste, with 4 tbsp. water in a small bowl. Pour in this mixture over the tray too.
  13. Stir in 16 fl oz. / 2 cups of water over the tray and season with salt and freshly ground black pepper. Combine well.
  14. Bake, uncovered for 40 – 45 minutes or until the meatballs are cooked and meatballs and vegetables start to brown. About 25 minutes into baking, check if more water needed in the tray. If so add another ½ cup of water, it is delicious to have some juice in this tray bake.
  15. Gently take out the squared eggplant slices with meatballs, using a large spatula. Serve hot with Cacik dip of cucumbers with yoghurt by the side. Plain rice or bulgur pilaf with almonds (recipe available in my blog) also goes well with this eggplant & meatball kebab.
